Summary

Bianco Avorio is an Italian cardoon and a close relative of the globe artichoke. Medium green plants grow up to 6 feet tall and blanch easily. Plants have gourmet artichoke-flavored stems, crunchy large white ribs, and spineless leaves. Leaves can be used in sachets and potpourri. Flowers are highly attractive to bees and butterflies. Flower buds can be eaten like artichoke. Seeds are also edible and can be used with squash and sweet potato.
