Summary

Cardoon is native to the Mediterranean region, where is has been relished for centuries. Plants are 2 to 5 feet tall with striking foliage. Plants have deeply lobed and heavily spined green to grey-green leaves and violet-purple flowers, which are produced in large, massively spined flower heads. Flowers are highly attractive to bees. Cardoon is a close relative of the globe artichoke and is considered a delicacy. It is grown for its thick, fleshy stalks; stalks have a similar flavor to artichoke. It can be served as a vegetable or used in soups and stews. It is also delicious braised or steamed.
