Summary

Chicory is a wildflower that is cherished as a flower and as an herb. Plants grow up to 4 feet tall and produce brilliant pastel blue dandelion-like flowers. Primarily grown as an ornamental, however the roots can be used as a coffee substitute or additive. It can also be cultivated for its leaves, usually eaten raw as salad leaves. Chicory should be planted outdoors in a sunny spot with proper drainage.
