Lacinato kale has been around since the 1700s. This Italian heirloom is one of the most tender and best tasting variety of kale. Blue-green leaves are long and slender. Leaves are savoyed, or curled and wrinkled. Flavor is described as both earthy and sweet. It is said that frost sweetens the flavor. Lacinato kale can be eaten raw but is more often blanched and then used in soups, stews, and casseroles. Also known as Dinosaur or Tuscan kale.
