Summary
Pimento peppers are considered one of the mildest of the peppers. This pepper is a step up from the bell pepper, which has no heat at all. Pimentos are large, red, and heart-shaped, with peppers averaging 3 to 4 inches long and 2 to 3 inches wide. Pimentos are very sweet and succulent; that combination with very mild heat makes the Pimento a widely used pepper. Pimento peppers are used as the filling inside green olives and are used to make pimento cheese.
