Summary
Sorrel is a green spinach-like herb that has long been cultivated for culinary delights. Sorrel is a perennial that is 18 to 24 inches tall with juicy stems and bright green arrow-shaped leaves. Leaves have tangy and sour flavor; they give a refreshing lemon flavor to many dishes. Sorrel is delicious as a herb or a salad green. Leaves can be pureed in sauces and soups or added to salads. Sorrel's distinctive sour taste is due to oxalic acid so it should be consumed in moderation. However, sorrel provides a number of minerals and vitamins including high levels of vitamins A and C.
