Mexican tarragon is a delicate, green herb with slender branched stems and glossy leaves. Plants are 18 to 30 inches tall with yellow marigold-like blossoms. While the flowers are entirely ornamental, the glossy leaves have a pleasant licorice flavor and scent. Mexican tarragon holds up well in warmer climates, and for this reason, it is a good substitute for French tarragon. Mexican tarragon also has a flavor quite similar to Tarragon, with a hint of anise. Used as an ingredient in Mexican and Southwestern cuisine.
